This year's Christmas present*:

Sweet Potato Casserole

Ingredients:

3 cups cooked sweet potatoes - mashed^
1/2 stick soft margarine (1/4 cup)
1/2 cup milk
2 eggs (beaten)
1 tsp. vanilla
1/2 cup sugar
1/2 tsp. cinnamon

Preparation:

- Blend ingredients (w/electric mixer, 'course. Hate to see you overworking yourself.)
- Plop (<-- baker's-speak) into 9" casserole dish
- Bake @ 350 degrees for 30-40 minutes
- Cover with miniature marshmallows when nearly done+

Yum!


* Because I have no idea what I promised your wives/girlfriends last year.
^ Substitute canned, if you like. Takes less time and the yams have been kind of stringy last couple years. smile.gif
+ I like mine melted; not brown. Your mileage may vary.

There's an idea. A picnic! If Jay can rustle up some lemons; Rugg, blueberries... let's see... Liz might still have some raspberries stashed away somewhere... you'd have the makings of the world's finest fruit salad. The ambrosial scent would carry light years across the galaxy - maybe even to the land of wii.

What can I do to help? Hmm.... Maybe bring a little rust to sprinkle around; make everything look festive. smile.gif
